Description

British summertime = British strawberries in season! :boogie:

It's one of the things i absolutly love about our summetime! They're just so small and tasty! :giggle:
So in the spirit of all things strawberry, i made these cupcakes...
Lemon Sponge with a white chocolate buttercream frosting, topped with white chocolate shavings, half a strawberry and a lemon slice :heart:

(hehe i feel like i'm starting to write my own recipe book :P)

You will need:
For the cupcake:
6oz Caster sugar
6oz Butter
6oz Plain flour
3 eggs
tsp Vanilla essence
1 1/2 tsp baking powder
1 Lemon, zest and juice

For the Frosting:
5oz Butter, softened
12oz icing sugar
100g white chocolate (plus extra to decorate after)
1 Lemon and strawberries to decorate the top

1. Pre heat the oven to Gas Mark 4 (180C, 350F) and line cupcake tins with 15 cupcake cases, as this is how many cupcakes it will make.

2. In a big bowl, cream together the caster sugar and the butter until pale. Add the eggs and flour and mix well.

3. Add the tsp of vanilla essence (i always just add a splash but i'm going to guess it's about a tsp), followed by 1 1/2 tsp of baking powder to help the cakes rise perfectly.

4. Grate the zest of 1 lemon, and add to the mixture, followd by the juice of half the lemon. Mix this into the cake mixure to give the cakes that lovely hint of lemon...Mmmm :aww:

5. Divide the mixture into your 15 cupcake cases, filling them up aprox 3/4 of th case, giving room to rise. Put in the oven for around 15 minutes, or until when you LIGHTLY poke the top of the cake, it bounces back up! If it leaves a finger dent, they need a little longer ;)

6. While they're baking, soften the butter for your frosting in a bowl. Gradually sift in the icing sugar, mixing in with the butter as you go. The frosting should start to stifen. Then in a double boiler on the hob, melt the white chocolate and mix into the frosting.

7. Once the cupcake are cooked, remove the cases from the tin and place on a wire rack to cool. When the cakes have completly cooled down, attack them with your frosting! I piped mine on using a piping bag and a large srar nozel, and then finished it off wth chocolate shavings, half a mini strawberry and a slice of Lemon.

8. The most important step of all....EAT THEM! =D Go ahead and share some with your friends too, show off your awesome cooking skills ;)

I really love how this looks and it sounds delicious! Lemon Sponge with white chocolate butter cream frosting white chocolate shavings half a strawberry and lemon slice... yum just yum XP
